50 mins prepServes 2
This recipe guides you through making homemade pici pasta from scratch for the first time, paired with a simple Sungold Pomodoro sauce using fresh cherry tomatoes. It's an easy and delicious Italian dish.
For the pasta: Mix or fold the 00 flour, 3 tablespoons of olive oil, and 3/4 cup of warm water together. Knead the mixture for 10 minutes until a smooth dough ball is formed. Let the dough rest in plastic wrap for 30-40 minutes. If not using immediately, store it in the fridge. Cook the pici pasta for 3-4 minutes in boiling salted water.
For the sauce: In a skillet, add 3 tablespoons of olive oil. Sweat down your sliced garlic and minced shallots. Add in the 1.5 pints of cherry tomatoes and season with salt. Cook until the tomatoes begin to burst and a sauce starts to form. Add a ladle of pasta water and the cooked pasta to the skillet. Toss everything together to combine. Add some fresh basil leaves. Garnish and enjoy.
